4 oz 70% chocolate
1/2 Tbs butter
1 oz heavy cream
2 eggs, separated
dash of cream of tartar
1/6 cup (35 gr) sugar
Preheat oven to 375 and butter and sugar 2 ramekins.
Melt chocolate in double boiler with cream and butter. Whisk in egg yolks.
Beat whites with cream or tartar until soft peaks, add sugar and beat to stiff peaks.
Fold eggs whites into chocolate mixture. Pour into ramekins
Bake at 375 for 15 minutes
